Vinification
the softly-pressed must is drawn after a short contactwith pomace, fermentation is performed in thermo-conditioned tanks for around 4 weeks at a temperature of around 14° C, after the clarifying, it is sent to the sparkling wine production with refermentation in bulk tanks for around 4 months (Martinotti method)
